Hi, I used to have the same problem of falafels falling apart. Now I make them using soaked chickpeas that have been broken down in a food processor together with all the seasonings and herbs. This is what gives them the the grainy texture – and surprisingly they don’t disintegrate when deep fried! The trick is to get the right consistency – otherwise they become very dense – so don’t over process. Good luck!
