Sweet Quince, Fennel Seed and Pistachio Sambousek Pastries

I made these little pastries using the Persian Quince Jam from last post but you could use any jam you like. I have used this lovely fig & honey compote before too which is great if you don’t like using sugary jams.

Sambouseks are little samosa-like pastries that are normally savoury and filled with meat or cheese. I made these savoury Fig & Feta Sambouseks before, so this is just a little step in a sweeter direction. The picture below is of the savoury sambouseks and demonstrates the folding technique.

Sweet Quince, Fennel Seed & Pistachio Sambousek Pastries Recipe

Makes 16-20 pastries. Vegetarian/Vegan.

  • 225 g (1 1/2 cups) white spelt flour (or normal)
  • 4 tbsp olive oil plus extra for brushing
  • a pinch of salt
  • 1 tsp fennel seeds
  • 1 tsp sugar
  • 110 ml (1/2 cup) warm water
  • jam/compote/carne de membrillo
  • feta cheese or ricotta or queso fresco (optional)
  • honey or agave syrup
  • a handful of pistachios, very finely chopped

Sieve the flour sugar and salt into a large bowl then stir in the fennel seeds. Add the olive oil, mixing it in with a fork then make a well in the middle of the flour and pour in the warm water. With your hand, fold the flour into the water, turning the bowl as you go until you get a sticky dough.

Turn it out onto a floured surface and knead until smooth and no longer sticky, 1 or 2 minutes. Wrap in clingfilm and rest in the fridge for at least an hour.

Preheat the oven to 180C and line two baking sheets with parchment brushed with a little oil.

Flour your work surface and rolling-pin and roll the dough out until it is about 2mm thick. Cut out small circles about 3 inches in diameter (use a floured cutter or a glass). Lift the excess pastry away from the circles  and re-roll it and cut out more circles. Keep doing this until you have used most of the dough. You should get 16-20 in total depending on the thickness of your dough.

Put the circles on the lined baking tray and, using a teaspoon place a small amount of jam in the centre of the circle and top with a little cheese (if using). Lift up the two opposite edges and seal them above the filling. Seal the two other ends by pinching them together to create a four-cornered sambousek. (See picture above). They can be refrigerated at this point if necessary.

Brush the tops of the sambouseks with a little olive oil and bake for 15 -25 minutes until golden and cooked. Leave to cool slightly then brush the tops with honey or agave syrup and dip them in the finely chopped pistachios.

Serve the sweet sambouseks warm or at room temperature with a glass of fresh mint tea or Turkish coffee.

Italian Courgette Crostata with Goat’s Cheese, Garlic and Basil

There is a whole field of courgette plants that I pass every morning with the dog. I have been watching the vegetables grow out of their delicate sunshine flowers and waiting for the day that I arrive and they have  all been harvested. I really hope they don’t leave them too long. They do that a lot here. Leave the courgettes to get too big before they pick them. I know if you grow your own that it is difficult to keep up with the mountain of courgettes that the plants produce but on a farm there is no excuse.

There is nothing worse than big, fat, watery courgettes. You really need them when they are young, firm and still squeaky. Like these ones I found at the market on Sunday.  These were only a euro for a kilo so I had to buy a kilo obviously.

Then you get home and realise you have a load of courgettes. One of my favourite things to cook with them at the moment is this crostata, we have it for dinner about once a week. A crostata is a freeform tart, an Italian version of a French galette. You cut a big circle of pastry, leave an inch or two border spread the base with some ricotta or yoghurt mixed with garlic & herbs, then make pretty concentric circles with courgette slices and brush with some herby garlic oil. You then roll up and crimp the edges and bake. It’s as easy as that, especially with this quick olive oil pastry recipe.

Courgette Crostata with Goat’s Cheese, Garlic & Basil Oil

Serves 4-6 as part of a meal. Vegetarian. Adapted from Smitten Kitchen

For the spelt olive oil pastry:

  • 250 g spelt or wholemeal flour
  • 1 tsp salt
  • 1 tsp dried herbs (I used 1/2 thyme 1/2 oregano)
  • 60 ml (1/4 cup) olive oil
  • 120 ml (1/2 cup) cold water

In a large bowl, mix together the flour, salt and herbs, drizzle in the olive oil mixing/mashing it in with a fork until well combined (a bit like crumble mix). Measure out the water then add an ice-cube to it. Slowly pour the cold water (not the ice-cube) into the flour and mix it in with the fork until just absorbed then bring it together with one hand kneading a little just until it forms a cohesive ball. Do not over work or it will be tough. shape into a flat disc, wrap in cling film and rest in the fridge until ready to use. It doesn’t need long but will keep well for a few days like that.

For the filling:

  • 2 firm small/med. courgettes, sliced into 1/2 cm coins on a slight diagonal
  • 1 pot goats yoghurt (about 100ml) or ricotta or greek yoghurt
  • a handful of grated manchego cheese (or parmesan/cheddar)
  • 25 gr crumbled goats cheese or feta
  • grated lemon zest 1/2 tsp
  • 1 clove garlic, finely chopped
  • a pinch of dried chilli flakes (optional)
  • 1+1/2 tbsp olive oil, plus extra for brushing
  • fresh basil leaves, finely sliced (plus extra for garnish)  or 1 tsp basil pesto
  • salt & black pepper

Lay the courgette slices on kitchen paper, sprinkle with salt and leave to sit while you prepare the pastry & filling.

In a small bowl mix (or blend) together the olive oil, garlic, chilli flakes, basil (or pesto) & lemon zest. Mix 1 tbsp of this in another bowl with the yoghurt (or ricotta), and cheeses. Season with salt & black pepper.

Preheat the oven to 200C and line a baking sheet with baking paper.  Roll out the pastry on a lightly floured surface, turning it quarter turns as you go to stop it sticking, to a very rough circle about 2-3 mm thick.  Take your largest dinner plate or serving plate,  place it lightly on the pastry and cut around it, remove the excess pastry and keep it in the fridge if there is enough for another small tart. Remove the plate with a sharp knife and lift the circle carefully, on a floured rolling pin, onto the lined baking tray.

Leaving a border round the edge of about an inch or two, spread the cheesy mixture out evenly over the pastry. Dry the tops of your courgette slices well with kitchen towel and then start laying them, overlapping slightly, around the edge still leaving the border clear.  When you have finished the outside circle start another circle going in the opposite direction just inside the first. Then overlap a few slices in the middle. See pictures above for these stages.

Drizzle and/or brush the rest of the garlicky herb oil all over the courgettes and then start to fold up the edges by turning the paper and folding and pleating as you go. Brush the pleated border with a little olive oil and bake in the preheated oven for 30-35 minutes until bubbling and golden. Leave to sit for 5 minutes then scatter over a few fresh basil leaves and serve.

Serve with a simple lemon & olive oil dressed green salad or this delicious White Bean Mash. This is a very versatile recipe, you could easily switch up the herbs and cheese to use whatever you have in the fridge.

I know I said I bought a kilo of courgettes and I only used two of them in this dish and I also know that a lot of you are overrun with courgettes at certain times of the year so maybe, like me,  you could have a go at making this deliciously light Zucchini Green Chilli Cornbread or these very moreish Baked Zucchini Fries as well.

Tyrokafteri – A Greek Chilli Cheese Dip with Homemade Goat’s Cheese

I’ve made Middle Eastern yoghurt cheese (labneh) before by straining Greek yoghurt in the fridge overnight but I’d never gone one step back and actually made the yoghurt as well.

I read about it at Chica Andaluza. She made yoghurt from cow’s milk and then drained it for longer to make a soft cheese. I really wanted to try this with goat’s milk to see if I could make my own soft goat’s cheese.

It took a little longer than expected to “turn” which may have had something to do with the unseasonably cloudy weather we had as soon as I decided I wanted to put my milk out in the sun, but it worked. I made soft goat’s cheese from goat’s milk and it was easy.

A litre carton of goat’s milk made about 250 gr goat’s cheese spread, which is the size of a tub of Philadelphia, it’s that sort of texture too.

Now I could get on with making a Greek chilli cheese dip called Tyrokafteri that had been wanting to try for a while. The original recipe is a mixture of feta cheese and ricotta blended with chillis, lemon juice and olive oil. I just replaced those with my soft goat’s cheese.

Tyrokafteri Chilli Cheese Dip/Sauce Recipe

Makes about 300 ml, vegetarian, gluten-free. Adapted from Epicurious

  • 4 red & 4 green chillis, I used birds eye chillis (use 20 gr if using the larger mild chillies)
  • 250 gr soft goat’s cheese (or 165 gr feta & 85 gr ricotta)
  • 1 tbsp fresh lemon juice
  • 35 ml extra virgen olive oil
  • salt & black pepper

Wash the chillis, remove the stalks, cut them in half lengthways and remove the seeds and membrane. Wear gloves or your hands will sting for ages and don’t touch your eyes.

Boil them in a small pan of boiling water for 15 minutes. Remove with a slotted spoon and peel off the skin (if using larger chillies) using gloves. If you used small chillies no need to peel. Boiling them takes away some of the heat but not the flavour.

Put the rest of the ingredients and  in a blender/processor and blend together well. I added my chillies two at a time because I was worried about it being too hot, and blended again. Taste and add more chillies until you are happy with the heat. I added all eight in the end and it was perfect. Blend until smooth and season with salt & black pepper. If  you are using feta you may not need any salt.

Pour into a serving bowl and refrigerate until using. It tastes even better the next day.

Serve with toasted pita bread or crudites for dipping or drizzle over roasted or chargrilled Mediterranean vegetables. It’s addictive. I served mine with some baked zucchini fries and I will be posting the recipe tomorrow…

Fennel and Orange Risotto with spring onion, goat’s ricotta and chilli

The fennel plant we are growing in a pot on our roof terrace is ready to harvest. Is ready the right word? I’m not sure.

Some of the spring onions are looking good too. Spring onions (cebolletas) in Spain are huge. They are completely different to the spring onions/scallions you get in the UK or US. So when I say use 1 spring onion it’s probably equivalent to 4 or 5 scallions.

I have been looking for suitable fennel recipes for a while now. Something to really showcase our first and only fennel. It had to be something special.  The classic Fennel & Orange Salad sounded lovely and fresh but it is raining here at the moment so I didn’t really feel like a salad. I wanted something warm and comforting. I came across a recipe for Orzotto with Sausage, Fennel & Rosemary on The Culinary Taste. Orzotto is a barley risotto. This was exactly the kind of thing I had been looking for. Minus the sausage, obviously. Rita said she was inspired by a Jamie Oliver recipe for Fennel Risotto so I asked her what other ingredients he had added. His recipe was for Fennel Risotto with Ricotta & Dried Chilli.

Jamie’s recipe used the zest & juice of a lemon as well. This got me thinking back to the classic fennel & orange salad combo and I decided (living in Andalucia) to use orange instead of lemon and our beautiful spring onions were the natural substitute for normal onions.

local cheese producer makes a goat’s ricotta (requeson in Spanish) which I had been wanting to try for a while. So, I had all the ingredients for the perfect, seasonal, locally produced, homegrown dish. Exciting!

Fennel & Orange Risotto with Spring Onion, Goat’s Ricotta & Chilli

Serves 4 vegetarian. Adapted from a Jamie Oliver recipe

  • 1 tbsp olive oil
  • 1 tbsp butter plus 1 tbsp for finishing
  • 1 fennel, finely chopped fronds reserved for garnish
  • 1 stick celery finely chopped
  • 1/2 tsp fennel seeds
  • 1 large Spanish spring onion or 4 or 5 small, chopped
  • 1 clove garlic, finely chopped
  • salt & black pepper
  • a splash of white wine/vermouth
  • about 300 gr risotto rice (I used brown)
  • about 1 litre of veg stock
  • about 1/4 tsp dried chilli flakes
  • 4 tbsp goats requeson (ricotta), normal ricotta or soft goat’s cheese
  • 1 orange, zested and juiced
  • about 50 gr grated parmesan

Put the veg stock in a small pan over a low heat. Heat the oil and 1 tbsp butter in a large pan over a medium heat and add the fennel seeds, spring onions, celery, and chopped fennel. Cook for a few minutes until softened and translucent then add in the garlic and cook for another minute. Add in the rice and stir to coat in the oil and butter. When the rice starts to turn translucent add in the wine and cook until it evaporates.

Add a ladle of the hot stock and season well with salt & black pepper. When all the liquid has been absorbed add another ladle of stock, stir or swirl the rice, wait for it to be absorbed and repeat until the rice is cooked. This should take about 18 minutes with white rice and longer with brown.

When the rice is cooked remove the pan from the heat, add the tbsp butter, parmesan, orange zest, half the orange juice and crumble over the ricotta. Stir, put the lid on and leave for 2 minutes.

Taste and add more orange juice if you think it needs it. Serve in warmed bowls garnished with a pinch of dried chilli flakes and the fennel fronds. Have a bowl of the ricotta and Parmesan on the table for people to help themselves to.

The flavour combination of the fennel and orange is really bright, slightly sweet & fresh. Together with the creaminess of the ricotta it is a deliciously rich dish, unusually reminiscent of a dessert in some ways. But don’t let that put you off. Serve it as a starter or lunch dish rather than a main course to people who appreciate different flavours and they will be left wanting more….

Spinach & Ricotta Gnocchi Recipe

We were invited to lunch at our friends Joan & Terry’s the other day & she made fabulous spinach & ricotta gnocchi which were as light as a cloud. My only attempts at gnocchi previously have resulted in a heavy, chewy, doughy disaster made with butternut squash, not nice, so I was kind of put off. This is why I made my own ricotta(see yesterday’s post) to use in this dish as Joan said it was supposed to be really easy to make, & it was.  This recipe was adapted from Marcella Hazan’s Essentials of Classic Italian Cooking and it worked, they were really light and delicious served with a tomato sauce. 

Rolled Spinach & Ricotta Gnocchi

 Spinach & Ricotta Gnocchi Recipe 

Serves 2 Vegetarian 

  • 300gr bag fresh spinach, washed & any stems picked out
  • 1 tbsp butter
  • salt & pepper
  • 150 gr ricotta ( see yesterday’s post on how to make your own)
  • 5ogr plain flour
  • 2 med egg yolks
  • 50 gr fresh grated parmesan
  • freshly grated nutmeg
  • extra shaved parmesan to serve
  • 1 jar tomato pasta sauce (or make your own )
  1. Put the washed spinach in a large pan with a lid. (You don’t need any water other than what is on the leaves)Add 1 tsp salt, put the lid on & leave it to wilt, over a med heat, stirring occasionally, for about 3 or 4 mins.
  2. When the spinach is wilted leave it to drain in a sieve until cool enough to handle.
  3. Put the cooled spinach in a clean tea towel or in 2 or 3 sheets of kitchen roll & squeeze out as much liquid as you can.
  4. Chop the squeezed out spinach roughly and set aside.

5. Heat the butter in a pan over a med heat then add the chopped spinach & a large pinch of salt and cook for about 3 mins stirring regularly. 

6. Empty the spinach into a bowl & leave to cool at room temperature. 

7. Once cooled add the flour and ricotta to the spinach and mix together well. 

8. Add the egg yolks, grated parmesan & some freshly grated nutmeg (about 1/4 tsp ), stir well until everything is incorporated, add some black pepper & taste to see if it needs more salt. 

9. Flour your hands and roll small amounts of the mixture in the palm of you hands to make little pellets ( about 3/4 inch long) and put them on a plate  lined with baking paper or flour.( See picture above). This makes about 40 small gnocchi enough for 2 people ( you can put them in the fridge at this point, for later, or even freeze them). 

10. To serve, bring a large pot of water to the boil & salt well. Drop the gnocchi, a few at a time, off of a slotted spoon into the water, they will sink to the bottom. 

11. In another pan heat up your tomato sauce on a med heat. When the gnocchi float to the surface they are ready (about 3 mins depending on the size). Scoop out the floating gnocchi with a slotted spoon and place in the warmed tomato sauce. Continue until all the gnocchi are in the sauce. 

12. Serve in warm bowls garnished with shaved parmesan.
