Green Fig and Goat’s Cheese Bruschetta with honey, basil and black pepper

It’s green fig season here……

I bought a kilo at the organic market on Sunday…..

I also bought a jar of local goat’s cheese spread. You may have already noticed that one of my favourite food combinations is fig and goat’s cheese from this Dried Fig & Goat’s Cheese Pizza and this Fresh Fig & Goat’s Cheese Quiche.

But this gives all the fabulous flavour in a fraction of the time. It literally takes 5 minutes to make and the ingredients are local. To me anyway… The figs and goat’s cheese are from Coin (next village).  The honey I used is not actually honey, it is called Miel de Cana (cane honey) which is molasses from Malaga, a delicacy used liberally in this local recipe for Berenjenas con Miel (fried aubergines with honey).

I finished it off with a grinding of black pepper, some flakes of sea salt, a drizzle of Andalucian extra virgen olive oil and some baby basil leaves from our terrace. Andalucian sunshine on a plate, sending it your way if you are in need of some….

Green Fig & Goat Cheese Bruschetta Recipe with honey, basil & black pepper

Serves 1 as a snack, vegetarian

  • 1 large ripe green fig, cut into 8 wedges
  • 1 piece of wholemeal/brown/rustic bread
  • goats cheese
  • black pepper
  • miel de cana or honey
  • sea salt
  • small fresh basil leaves
  • extra virgen olive oil
  • salad leaves to serve (optional)

Toast the bread under a hot grill (or in a toaster) on both sides. Spread the goat’s cheese on the toast and top with the wedges of fig. Generously drizzle over the honey and grind over the black pepper.

Put under the grill for a few minutes until bubbling and hot. Serve sprinkled with flakes of sea salt, baby basil leaves and drizzle over some olive oil. Add a handful of salad leaves to the plate if you like.

Serve this as a luxurious breakfast, brunch, lunch, snack or supper. Even as a starter/appetizer it works very well. Easy, impressive and it takes minutes. Which is always a good thing.

Andalucian Stuffed Vine Leaves with Spinach, Raisins and Almonds

I’ve been watching these grapes drying on the vine and turning into raisins. Every day I walk past them and wonder if they are going to pick them today or whether they are just leaving them to rot.

There’s a traditional Andaluz dish called Espinacas con Pasas y Almendras which is Spinach with Raisins & Almonds. I wanted to use this as a filling for stuffed vine leaves because it is similar to the Greek/Middle Eastern filling except they usually contain rice. I wanted to do and Andalucian version but I couldn’t find vine leaves anywhere, they just don’t sell them.

So I decided to pick some and use them, well I got The Washer Up to pick them actually. I read about how to prepare them here. Basically you just wash them, blanch them for a few minutes in boiling water, drain them, leave them to dry and then store them in the fridge or freezer.

Or you could just buy them in a jar and rinse them before using.

When you’ve made the filling you pile a heaped teaspoon onto the vine leaf at the bottom where the stalk has been removed. Then you fold the bottom leaves up over the filling, fold the sides in and roll up like a spring roll.

I only cooked mine for 15 minutes because my filling didn’t contain rice. Most recipes I looked at were cooked over a low heat for about 45 minutes to cook the rice. This is much quicker.

This makes quite a lot of filling and I didn’t have that many vine leaves (as I had picked them off somebody elses vine) so I used the rest of the filling to make some empanadas which were lovely too. You can buy ready to use round empanada sheets or make you own pastry from my recipe here.

Just pile  a heaped tablespoon of the filling on one side of the circle, fold the other side over to make a semi-circle and seal the edges with a fork. Brush with olive oil or beaten egg and cook at 200 C for 10-15 minutes depending on the thickness of your pastry.

Andalucian Stuffed Vine Leaves with Spinach, Raisins & Almonds

makes 24-36 stuffed vine leaves, vegetarian, gluten-free

  • 2 tbsp olive oil
  • 500 gr frozen spinach, defrosted and drained
  • 1 red onion, finely chopped
  • 1 large clove garlic, finely chopped
  • 1 red chilli, deseeded & finely chopped (optional)
  • 75 gr whole toasted almonds, roughly chopped
  • 50 gr raisins
  • freshly grated nutmeg (about 1/4 tsp)
  • a handful of fresh parsley, chopped plus extra for garnish
  • salt & black pepper
  • 50 gr manchego cheese, grated (or crumbled feta)
  •  a squeeze of lemon juice
  • vine leaves (rinsed if in brine) see how to prepare vine leaves here

Heat the oil in a large pan over medium heat, add the onions and a pinch of salt and cook for about 5 minutes until softened and translucent. Add the garlic and chilli and cook for another minute.

Add in the nuts, spinach, raisins and nutmeg, season with salt & pepper and cook for another few minutes. Add a squeeze of lemon juice and the grated cheese. Taste for seasoning and drain away any excess liquid from the spinach. transfer to a bowl to cool.

Lay out your rinsed or blanched vine leaves (cut away any stalks) on a clean surface veiny side up. Pile a heaped teaspoon of the filling onto the bottom part of the leaf where the stalk was (see picture above) then fold the bottom leaves up and over the filling. Fold both sides of the leaf in and over the filling, then roll it up like a mini spring roll.

Place all the rolled vine leaves seam side down in a saucepan, squash them together so there’s no gaps. Drizzle with olive oil and then cover with water to about and inch over the vine leaves. Cover them with a heatproof plate (to stop them floating up), bring to the boil then lower the heat to a simmer, cover with lid and cook for about 15 minutes (if your filling doesn’t contain uncooked rice). Keep an eye on them though and try not to burn the bottom of the pan. I may or may not have done this!

Remove with tongs to a plate and leave to cool.

Serve at room temperature sprinkled with fresh parsley and a Greek yoghurt dip. I just mixed some Greek yoghurt with chopped fresh parsley, lemon juice and salt and pepper.

Berenjenas Con Miel – Fried Aubergines with Cane Honey

Berenjenas con Miel is a typically Andaluz dish from around Malaga and Granada. It has saved my life, on more than a few occasions, when eating out here, as it is on most Spanish restaurants’ menus and it’s usually the one and only vegetarian dish, apart from tortilla (no more tortilla, por favor!) on offer.

It is the second in my aubergine season series, the first being an Aubergine & Chickpea Curry, designed to convert even the most stubborn of aubergine haters out there.

The reason it will convert is that it is sliced very thinly, lightly coated in seasoned flour and fried until golden. Then comes the good bit, it is drizzled generously with Miel de Cana. Miel de Cana literally translates as “sugar cane honey” or, as it known elsewhere, molasses.

Miel de cana is produced in the Malaga area and it comes in a glass jar with a beautiful printed label.

It says on the side: “Did you know that…?”

“In the 5th century BC, the Persian king Dario discovered sugar cane on his expedition to the Indus Valley. He described it as a cane that gives honey without the intervention of bees.”

If you see some anywhere, buy it, I’ve heard that they have stopped producing it because all the sugar cane plantations have been destroyed to make way for the new runway and terminal at Malaga airport.

I don’t know whether this is true or not, but it would be a real shame to lose this important local product with such a long history, the company was started in 1929.

Berenjenas Con Miel Recipe

Serves 2-3 sharing as part of a meal. Vegan. From Spanish Food About

  • 1 large Aubergine
  • 1-2 tsp salt
  • black pepper
  • about 1oo gr (3/4 cup) plain flour
  • 220 ml (1 cup) virgen olive oil
  • miel de cana (or molasses/ honey/ maple syrup)

Wash and dry the aubergine, cut off the stalk end and carefully slice into 3 mm thick circles.

Put the slices on a baking tray or large platter and lightly salt each one on both sides. Leave for at least 20 mins up to an hour to draw out the moisture, then pat both sides dry with kitchen roll.

Heat the oil in a med-large frying pan over a medium high heat. Tip the flour onto a large plate and season it with salt and pepper, mix it together with your hands. Put about 4 slices of aubergine in the flour and press down, turn over with tongs and coat the other side.

When the oil is hot (it should sizzle when you put the slices in), lift the slices with tongs, shaking off the excess flour, and place in the oil. Cook for about a minute on one side until golden brown and then turn over with the tongs and do the same on the other side. When cooked on both sides remove to some kitchen roll to drain. Meanwhile put some more slices in the flour and continue until all the aubergine is cooked.

Arrange the slices overlapping in one layer on a large serving dish/platter and drizzle generously with the miel de cana/molasses. Serve immediately with extra miel de cana on the table.

Things That Made Me Smile Today……….

The cactus fruit or prickly pear are called Chumbos here and are everywhere at the moment.

I love their bright acid colours against the burnt earth and the almost cartoon-like shapes of the cactus. It feels very Mexico to me.

They make me smile because every time I see them I think of The Jungle Book and I just can’t get that song out of my head.  “Do be do I wanna be like you oo… I wanna walk like you, talk like you, ooo….”

Mediterroccan Tapas Mezze

This is a bit of a mish mash of different mezze & tapas dishes that I wanted to try. I bought a tin of whole roasted peppers after seeing Jamie Oliver stuff them with ground almonds, Manchego cheese and breadcrumbs for one of his 30 Minute Meals. This is a tin of Pimientos del Piquillo.

This is taken from Iberia Nature “Pimientos del piquillo (piquillo peppers) come from Navarra. These small red peppers are charred over wood charcoal or old vines, then peeled by hand, marinated in olive oil with herbs, and eventually eaten either alone, in a salad or stuffed. The flavour of canned or jarred piquillo peppers is so extraordinary Alain Ducasse, Daniel Boulud, Ferran Adrià and many other famous chefs use them. Indeed 99% of Spain’s cooks (amateurs or pros) use canned or jarred piquillos. In general, I’d never recommend a canned product over a fresh one, but in this instance I will.  In the case of piquillos, the essential flavour may actually be enhanced by the preservation, and the texture is definitely improved”.

Here in Andalucia one of the most popular ingredients used for stuffing the peppers is Bacalao, (salt cod) mixed with a kind of bechamel sauce. I have been caught out before in tapas bars when we first came here thinking the stuffing was mashed potato because that is what it looks like. Also when you ask most Spanish people if something is vegetarian they say yes even if it contains fish. I have always wanted to make a my own version of this dish as it looks so appealing.  I used some leftover mashed potato mixed with Jamie’s ground almonds, Manchego cheese, breadcrumbs and sherry (Jerez) vinegar to create the stuffing and used a piping bag to fill them. Much easier than trying to do it with a spoon.

Another recipe I’ve been wanting to try for a while is Foul Mdammas. A Middle Eastern dish made with fava beans/broad beans, tomatoes, lemon juice herbs & spices it is a fresh & seasonal salad. The recipe came from the beautiful Orange Blossom Water . I used frozen broad beans for this recipe which I peeled after cooking but you don’t have to. I just prefer the bright green colour and don’t really like the texture of the outer skins. I topped my Foul with some crumbled Feta because I couldn’t resist.

I haven’t made Hummus for a long time which is strange because it used to be my favourite thing. I think I may have OD’d on it slightly. It wouldn’t be an exaggeration to say it was all that I ate for a long time when we had the restaurant. I didn’t have time to eat properly so I would just grab some crackers and hummus. I, not surprisingly, got sick of it and never wanted to see it again. I think I am now ready to rediscover it’s charms as a delicious, nutritious snack high in protein, fibre and iron.

Of course you need some sort of bread on a mezze / tapas plate. Something to use as a vehicle for all the delicious goodies. A scoop or shovel, if you like, to carry the food to your mouth. I bought some Atta the other day which is a soft wholemeal flour used for making chapattis. This was the perfect excuse to debut the new purchase.

I followed the recipe on the back of the flour packet and added in the flavours from my Leek & Fennel Seed Flatbreads to spice them up a bit. So there you have it, my justification for the fabulous  fusion of flavours on one plate. I’ve said it before, the southern coast of Spain is only eight miles from Morocco at the narrowest point across the Atlantic. Well that’s my excuse anyway….

Stuffed Piquillo Peppers Recipe

serves 2 or 3 as a tapa, vegetarian, adapted from Jamie Oliver’s 30 Minute Meals

  • 1 jar/tin pimientos del piquillo or whole roasted peppers there are 8 in a 450 gr tin
  • some cold mashed potato (about 2 potatoes worth)
  • about 50 gr Manchego cheese, grated
  • 50 gr ground almonds
  • 1/2 tsp finely chopped fresh rosemary plus extra for topping
  • 1/2 tsp sherry (Jerez) vinegar (or balsamic)
  • salt & black pepper
  • wholemeal breadcrumbs
  • olive oil

Preheat the oven to 200 C. Put the cold mash, manchego, almonds, chopped rosemary, Jerez vinegar, salt & pepper into a processor or bowl and blend until incorporated. Taste for seasoning.

 Put the mixture into a piping bag (or freezer bag with a corner cut off) and pipe the mixture into the peppers until full. Put in an ovenproof roasting dish, sprinkle with breadcrumbs, some chopped rosemary and drizzle with olive oil. Bake in the preheated oven for about 20 minutes.

Foul Mdammas Recipe

serves 2 or 3 as part of a mezze, vegetarian. Adapted from Orange Blossom Water

  • 200 gr frozen broad beans
  • 1 tomato, finely chopped
  • a handful of fresh parsley, chopped
  • 1/2 clove garlic, finely minced
  • the juice of 1/2 lemon
  • 1 tsp preserved lemon peel, chopped (optional)
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • freshly ground black pepper
  • 1/2 tsp paprika
  • 1/2 tsp ground cumin
  • parsley leaves and Feta (optional) for garnish

Cook the beans according to the instructions on the pack, drain under cold water and peel when cool enough to handle. You don’t have to peel them but I think it tastes much fresher. Add the rest of the ingredients apart from the garnish and mix well. Check seasoning and serve garnished with extra parsley leaves & some crumbled Feta if you like.

My Hummus Recipe

makes about 5oo gr, vegan

  • 1 tin/ jar cooked chickpeas, drained, rinsed & dried
  • 2 or 3 tbsp tahini paste
  • the juice of half a lemon
  • 2 tbsp extra virgin olive oil
  • 1  or 2 cloves garlic, finely chopped
  • 1 tsp finely chopped preserved lemon peel (optional)
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/4 tsp cayenne
  • 1 tsp yemeni lemon pickle (optional)
  • salt & black pepper
  • sesame seeds
  • chilli oil

Put everything (except sesame seeds & chilli oil) in a food processor or bowl and blend until smooth.  Taste and add more salt/lemon juice/tahini/olive oil if required. Hummus is such a personal thing you need to tailor it to your taste. Blend again and store in an airtight container in the fridge. When ready to serve, sprinkle with toasted sesame seeds and a little chilli oil (or olive oil).

Leek & Fennel Seed Wholemeal Chapattis Recipe

makes 4, vegetarian

  • 1 tsp olive oil
  • 1 leeks, cut in half lengthways, rinsed and finely sliced
  • 1 tsp fennel seeds
  • a pinch of dried chilli flakes
  • salt & black pepper
  • 300 gr wholemeal chapatti Atta (or wholemeal bread flour)
  • cold water

Heat the olive oil in a frying pan over a medium high heat. Add the fennel seeds and when they start to pop add in the leeks, chilli flakes a pinch of salt and black pepper. Saute for about 3 minutes until the leeks are cooked and slightly browned. Set aside to cool.

Put the flour into a large bowl with 1/2 tsp salt and mix. When cooled stir the leeks through the flour to distribute evenly. Add cold water bit by bit until you have a stiff dough and it stays together in a ball. Knead the dough for 3 or 4 minutes, wrap in clingfilm and put in the fridge for at least half an hour.

Divide the dough into four balls and roll each ball out on a floured surface to about 2 or 3 mm thick. Heat a frying pan over a medium heat and cook the chapattis turning frequently until golden brown. Rub with a little oil or ghee and keep warm under a clean tea towel (or warm oven) while you cook the rest. Serve immediately.

Honey, Apple, Date and Walnut Olive Oil Cake

There are so many bees around at the moment busy collecting pollen. They reminded me of a visit I made to a local honey producer about a month ago that I haven’t blogged about yet. I have been waiting for the perfect honey recipe to come along which is deserving enough to feature the delicious honey that I bought, and this is definitely THE one. More about that later, first the visit then the recipe…

You had to drive through a river to get there but I doubt all that water is still there now with all the hot weather we have been having. It looks worse than it is….

Miel is “honey” in Spanish and Fuente del Sol means “Fountain (or Source) of Sun”.

There is a slightly unattractive warehouse and a very well hidden little shop with a small sign outside….

Inside the shop they sell lots of different types of honey. There’s orange blossom, rosemary, thyme, eucalyptus and wild flower honey and they sell it in the squeezy non-drip bottles as well as glass jars. They also sell pollen and royal jelly products as well as a range of  natural soaps and cosmetics made using aloe vera and olive oil. 

I bought some thyme honey which is really lovely. I have been having it on toast for breakfast with my local goat’s ricotta (requeson) it’s so good. If you’ve never tried ricotta and honey on toast you should, and so much better when they are both local. You could even make your own ricotta, it is really easy unless you’re my dad, but that’s another story…..He had a bit of a drama making my spinach & ricotta gnocchi!

I’ve been trying recently to use olive oil instead of butter whenever possible in my cooking. The delicious extra virgin olive oil in the picture above we helped to harvest back in November and I’ve used it to make some banana & coconut muffins that tasted great.  We store it in empty wine bottles because plastic bottles are not good – for your health or the health of the oil.  I’ve seen quite a few Italian recipes for olive oil cakes and wanted to give it a try. I was thinking local olive oil and local honey it’s got to be good. I wasn’t wrong….

Honey, Apple, Date & Walnut Olive Oil Cake

makes 16 squares, vegetarian

  • 3 large eggs, at room temperature
  • 130 gr brown sugar
  • 1 tsp vanilla extract (optional)
  • 165 ml good olive oil
  • 260 gr runny honey (coat the measure with a little olive oil so the honey slips out easily)
  • 375 gr wholemeal flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 1 1/2 – 2 apples, peeled,cored and roughly diced. I used 1 1/2 large fuji apples you need something crisp.
  • 100 gr walnuts, roughly chopped
  • 100 gr dates, stoned and roughly chopped, plus a few extra for garnish
  • a small tub of mascarpone/creme fraiche
  • extra honey

Preheat the oven to 180 C and line a 9×13 inch cake/roasting tin with baking paper, base & sides. Beat the eggs, brown sugar & vanilla (if using)in a large bowl with an electric mixer for about 5 minutes until light & fluffy. Slowly add in the honey and oil bit by bit, beating until well blended.

Into another bowl sieve the flour, baking powder, baking soda, cinnamon and salt then tip in the whole-wheat bits left in the sieve as well. Stir to combine. Add the flour mixture, apples, walnuts and dates to the wet ingredients and fold together gently until just blended (Don’t overmix you will get a tough cake).

Pour the mixture in to the lined baking tin and spread out evenly. Bake in the preheated oven for 35 minutes or until the top is firm and golden brown. Leave to cool in the tin.

Cut into 16 squares and serve with coffee and a pot of mascarpone drizzled with more honey and some more dates or walnuts for the top.

Spoon some of the honey mascarpone on top of your piece of cake and top with a date half. It was all looking quite healthy up until then wasn’t it. Oh well it’s only a suggestion…..

This cake is so moist and delicious with the apples, honey and olive oil, you need to make it and then invite people round for an afternoon tea or coffee. Otherwise you might just have to eat it all. It keeps really well too, if it should last that long…..Enjoy!

Fennel and Orange Risotto with spring onion, goat’s ricotta and chilli

The fennel plant we are growing in a pot on our roof terrace is ready to harvest. Is ready the right word? I’m not sure.

Some of the spring onions are looking good too. Spring onions (cebolletas) in Spain are huge. They are completely different to the spring onions/scallions you get in the UK or US. So when I say use 1 spring onion it’s probably equivalent to 4 or 5 scallions.

I have been looking for suitable fennel recipes for a while now. Something to really showcase our first and only fennel. It had to be something special.  The classic Fennel & Orange Salad sounded lovely and fresh but it is raining here at the moment so I didn’t really feel like a salad. I wanted something warm and comforting. I came across a recipe for Orzotto with Sausage, Fennel & Rosemary on The Culinary Taste. Orzotto is a barley risotto. This was exactly the kind of thing I had been looking for. Minus the sausage, obviously. Rita said she was inspired by a Jamie Oliver recipe for Fennel Risotto so I asked her what other ingredients he had added. His recipe was for Fennel Risotto with Ricotta & Dried Chilli.

Jamie’s recipe used the zest & juice of a lemon as well. This got me thinking back to the classic fennel & orange salad combo and I decided (living in Andalucia) to use orange instead of lemon and our beautiful spring onions were the natural substitute for normal onions.

local cheese producer makes a goat’s ricotta (requeson in Spanish) which I had been wanting to try for a while. So, I had all the ingredients for the perfect, seasonal, locally produced, homegrown dish. Exciting!

Fennel & Orange Risotto with Spring Onion, Goat’s Ricotta & Chilli

Serves 4 vegetarian. Adapted from a Jamie Oliver recipe

  • 1 tbsp olive oil
  • 1 tbsp butter plus 1 tbsp for finishing
  • 1 fennel, finely chopped fronds reserved for garnish
  • 1 stick celery finely chopped
  • 1/2 tsp fennel seeds
  • 1 large Spanish spring onion or 4 or 5 small, chopped
  • 1 clove garlic, finely chopped
  • salt & black pepper
  • a splash of white wine/vermouth
  • about 300 gr risotto rice (I used brown)
  • about 1 litre of veg stock
  • about 1/4 tsp dried chilli flakes
  • 4 tbsp goats requeson (ricotta), normal ricotta or soft goat’s cheese
  • 1 orange, zested and juiced
  • about 50 gr grated parmesan

Put the veg stock in a small pan over a low heat. Heat the oil and 1 tbsp butter in a large pan over a medium heat and add the fennel seeds, spring onions, celery, and chopped fennel. Cook for a few minutes until softened and translucent then add in the garlic and cook for another minute. Add in the rice and stir to coat in the oil and butter. When the rice starts to turn translucent add in the wine and cook until it evaporates.

Add a ladle of the hot stock and season well with salt & black pepper. When all the liquid has been absorbed add another ladle of stock, stir or swirl the rice, wait for it to be absorbed and repeat until the rice is cooked. This should take about 18 minutes with white rice and longer with brown.

When the rice is cooked remove the pan from the heat, add the tbsp butter, parmesan, orange zest, half the orange juice and crumble over the ricotta. Stir, put the lid on and leave for 2 minutes.

Taste and add more orange juice if you think it needs it. Serve in warmed bowls garnished with a pinch of dried chilli flakes and the fennel fronds. Have a bowl of the ricotta and Parmesan on the table for people to help themselves to.

The flavour combination of the fennel and orange is really bright, slightly sweet & fresh. Together with the creaminess of the ricotta it is a deliciously rich dish, unusually reminiscent of a dessert in some ways. But don’t let that put you off. Serve it as a starter or lunch dish rather than a main course to people who appreciate different flavours and they will be left wanting more….
