Savoury Tomato Cobbler with Basil and Manchego

Savoury Tomato & Basil Cobbler

It is still summery here but I realise that in other parts of the world it can’t make up its mind and is sometimes raining and cold. This recipe is perfect because it makes the transition from a light summery dish to cosy comfort food very easily indeed. Just serve it with a nice rocket salad if the sun is out or some yoghurt & herb mashed potatoes if the weather and/or you are miserable. Mashed potato is a well known antidote to misery.

Tomatoes are cheap & plentiful here and also full of flavour. This recipes uses 3 different types of tomato, plum tomatoes, beef tomatoes and cherry tomatoes but you don’t have to. Cooking the tomatoes encourages flavour even out of the most out of season, cold  & dull specimens.

Tomato Basil & Manchego CobblerSavoury Tomato Cobbler with Basil & Manchego Recipe

Serves 6-8, vegetarian. 

  • 1 onion, chopped
  • 4 plum tomatoes, halved lengthwise, white core removed
  • 1 kilo beef (Castellano) tomatoes, chopped (or any tomatoes)
  • 500 g cherry tomatoes, halved
  • 3 cloves garlic, finely chopped
  • 1 Tbsp sherry vinegar
  • a pinch of dried chilli flakes
  • 1 tsp dried or fresh thyme
  • a squeeze of honey
  • 1 tsp Worcestershire sauce (vegetarian)
  • about 10 fresh basil leaves, rolled up & julienned (you will need more for the dough mix too)
  • 1 Tbsp cornflour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 1/2 cups (225 g) wholemeal spelt flour (or other flour)
  • 1/2 cup (75 g) cornmeal/fine polenta/masa harina 
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup (110 ml) olive oil
  • 3/4 cup (100 g) finely grated Manchego (or Parmesan) cheese
  • a good handful of basil leaves, rolled & julienned
  • 1 1/4 cups (275 ml) goats (or Greek) yoghurt or buttermilk

Preheat the oven to 180C.

Cook the onion in 1 Tbsp of olive oil in a large pan over a medium heat with a pinch of salt until softened, about 4 minutes. Add the garlic, chilli flakes & thyme and cook for 2 minutes more. Add the chopped tomatoes, cook for 5 minutes then add the vinegar, Worcestershire sauce, cornflour, salt, pepper and honey. Cook for 5 minutes more. Taste and adjust salt & honey as required.

Place the halved plum tomatoes, cut side up in the bottom of a 9 x 13 inch baking dish (or 1 half in each individual dish if you have them), then spoon the cooked tomato, onion mixture over them. Top with the halved cherry tomatoes. Bake for 10 minutes.

Meanwhile mix together the flours, baking powder & baking soda in a large bowl and season with salt & black pepper. Drizzle over the olive oil and then crush it into the flour using a fork until it is evenly distributed and resembles crumble mix. Put it in the fridge for 10 minutes.

Stir the grated cheese & basil into the flour mix, then add the yoghurt and stir until just combined. Do not overmix or it will be tough. Dollop small roundish handfuls of the mix on top of the tomatoes, leaving gaps in between, do not spread to cover.

Bake for 30 – 35 minutes until golden brown. Leave to cool for 10 minutes or longer before serving with either a green salad and/or yoghurt & herb mashed potatoes.

Homemade Tomato Ketchup…. with a kick

What do you do with a kilo of plum tomatoes that you bought because they were really cheap and gorgeous looking? Well, I decided to turn them into ketchup because I had never done it before and it felt right. In a preparing for the winter months ahead type way.

I am really pleased with the consistency of it. It actually looks and tastes a lot like real ketchup, with  quite a bit of heat. I added some of our homegrown Scotch Bonnet chillis to the tomatoes instead of  the pinch of cayenne that the original recipe called for. It’s fiery but fruity at the same time.

And there’s no nasty chemicals or weird stuff, excellent!

Homemade Spicy Tomato Ketchup Recipe

Makes 1 bottle. Vegan, gluten-free. Adapted from Chowhound

  • 1 kilo ripe tomatoes
  • 1/2 red pepper, seeds & membrane removed then chopped
  • 1 small onion, chopped
  • 75 ml sherry vinegar (or cider vinegar)
  • 1 clove garlic, crushed
  • 1/4 tsp black peppercorns
  • 1/4 tsp ground cinnamon (or 1 cinnamon stick)
  • 1/4 tsp caraway or celery seeds
  • 1/4 tsp cloves
  • 1/4 tsp allspice berries
  • 1/2 tsp mustard
  • 1/2 tsp Worcestershire sauce
  • 2 small scotch bonnet chillis (optional) deseeded if you like
  • 3 tbsp molasses (miel de cana)
  • 1/2 tsp salt

Put the tomatoes, red pepper and chillis in a food processor and blend to a smooth puree. Push this through a sieve into a large saucepan with a spatula until you are just left with dry skins and seeds in the sieve. Discard this.

Puree the onion and add that to the pan with the pureed tomatoes. Cook and stir occasionally over low heat until it is reduced by about a third and is considerably thicker.

Meanwhile put garlic, peppercorns, allspice, cloves, cinnamon, caraway seeds and vinegar into a small saucepan and simmer gently, covered for about 1o-15 mins. Then pour about half the spiced vinegar through a sieve or tea strainer into the thickened tomato mixture. Add the molasses/miel de cana, mustard, Worcestershire sauce and salt and stir to combine everything well.

Taste at this point and adjust any of the ingredients to suit you. Maybe it needs more of the spiced vinegar or more molasses or salt. Cook it some more, stirring so it doesn’t catch, until it is thickened and looks like ketchup. Don’t worry if it looks a bit separated you are now going to blend it carefully with a stick blender in the pan (or in a food processor) and that smooths it out nicely.

Pour into a jug and then pour into a sterilised jar or bottle, seal with an airtight lid and leave to cool. When cool, store in the fridge.

Serve it with chips, beanburgers, anything really you don’t need me to tell what to serve your ketchup with. My particular favourite is with poached eggs and spinach on toast.

As this is quite a short post it seems like quite a good time to tell you about some exciting news. I am going to holding two cookery workshops at the Pepe Kitchen cookery school in Benalmadena. The first one on Saturday 20th October is a Vegetarian Middle Eastern Mezze Workshop where we will be making, Baba Ghanoush, Muhammara, Maast-o Khiar, Fattoush, Spanakopita & Sambouseks. The workshop is from 10am – 2pm and we all get to eat everything we have made for lunch together afterwards.

The second one is a Healthy Baking Workshop on Saturday 17th November from 5pm -9pm. We will be using spelt flour and olive oil to make pastry for tarts, galettes and quiches as well as making sweet and savoury spelt flour muffins and a flaxseed spelt raisin and date breakfast loaf. We will of course be tasting them all afterwards just to make sure they are good obviously!

Yellow Cherry Tomato Tarte Tatin with Fresh Herbs

I bought some of these little organic yellow tomatoes at the market and have been saving them to star in something rather than just adding them anonymously into salads. Their beauty deserves a leading role.

A tarte tatin is one of those recipes, like souffle, that strikes fear into the hearts of many. This however, is really easy. There I’ve said it. I’m just waiting for the backlash now.

I used my simple spelt flour olive oil pastry recipe to keep it vegan and because it’s so much quicker than using butter and letting the pastry rest. I used honey and a sherry vinegar syrup drizzle to add sweetness but you could use agave syrup (to stay vegan) and balsamic syrup would be lovely too.

Sprinkling the tomatoes with a handful of breadcrumbs before covering them with pastry soaks up a lot of  the juice that leaks out of the tomatoes while cooking and helps to hold them together with the honey.

Turning it out is the scary part but be careful and confident, or get The Washer Up to do it because you burnt yourself on the handle of the frying pan. You will need an ovenproof frying pan obviously, no plastic handles please that would be messy.

You could also use a shop-bought puff pastry for this recipe to save time. The recipe for the olive oil pastry is here. I used about half of that amount for an 8″ tarte. The amount of tomatoes will depend on the size of your frying pan. You need to cover the base snugly so they can’t move about.

Yellow Cherry Tomato Tarte Tatin Recipe

Serves 2, vegan/vegetarian, wheat-free. I used an 8 “/20 cm ovenproof frying pan/skillet

  • about 250 g yellow (or a mix) cherry tomatoes
  • 1 tbsp olive oil
  • 2 tsp honey/agave syrup
  • sea salt & black pepper
  • dried oregano
  • balsamic or sherry vinegar syrup
  • a handful of breadcrumbs
  • olive oil spelt flour pastry (or your choice of pastry)
  • fresh basil, thyme or oregano leaves to garnish

Preheat the oven to 200 C. Put the olive oil in the frying pan/skillet and cover the base with a snug even layer of cherry tomatoes. You want to fill any gaps as much as possible. Drizzle over the honey/agave syrup and balsamic/sherry vinegar syrup. Season well with oregano, salt & pepper and leave to cook over a medium heat for a few minutes.

Meanwhile on a floured surface,  roll out the pastry to a rough circle about 2 or 3 mm thick and about the same size as the top of the frying pan. Sprinkle a handful of breadcrumbs all over the top of the tomatoes and remove from the heat. Cover the tomatoes with the circle of pastry and tuck the edges down the inside of the pan encasing the tomatoes. Prick all over the top of the pastry with a sharp knife and bake for 25-30 minutes (depending on size) until the pastry is cooked.

Remove from the oven and leave to cool on a wire rack for at least 10 minutes (preferably longer). When ready to turn out, tip away any excess liquid (I didn’t have any) and run a knife around the edge of the pan to loosen the sides. Using oven gloves if still hot, place a large plate upside down on top of the pan and press down hard, then quickly and carefully flip the whole thing over so the pan is upside down and the tarte falls out onto the plate. Remove the pan and replace any tomatoes that may have fallen out of their place.

Serve at room temperature scattered with the fresh herbs. Slice and eat with a green salad or offer around thinner slices as a canape before dinner.

Tomato and Saffron Risotto with Basil, Pine Nuts and Parmesan

It’s been a while since I posted a recipe inspired by our trip to Cape Town. This one is a version of the Tomato Risotto I had at Sand at The Plettenberg Hotel in Plettenberg Bay.

Sand is one of the restaurants in the Liz Mcgrath Collection of three hotels overseen by the Grand Chef, Peter Tempelhoff. I have been lucky enough to have eaten at all three. I had an unforgettable passionfruit souffle at The Marine, Hermanus a few years ago that I must remember to have a go at with my next  lot of passionfruit.

I had one of the best meals of my life, a 7 Course Vegetarian Tasting Menu at The Greenhouse , Cellars Hohenort, awarded restaurant of the year and number 1 in South Africa, this year. More of that in a future post, I am still trying to get close to replicating one of the recipes from that memorable meal, but failing miserably at the moment. I can see why he is a multi award-winning Grand Chef.

Above are some pictures of the beautiful meal I had at Sand prepared by the very capable sous-chef , Tronnette. We were presented first of all with some Baked Rosemary & Sea Salt Lavash with Aubergine Puree and a Melon Shot with Cucumber Salsa Bruschetta. For a starter I chose the Double Baked Underberg Cheese Souffle with Chive & Parmesan Veloute which was light, fluffy and creamy, the best  savoury souffle I have ever had. A Tomato & Artichoke Risotto was prepared especially for me (being vegetarian). It had an intense tomato flavour (from the stock I think) that made it particularly special. The dessert was a Madagascan Vanilla Creme Brulee, Coconut Foam, Marshmallow Compresse and Pineapple Almond Biscotti, this was totally amazing!

They very kindly sent me the recipes for both the souffle and the risotto. So, with it being summer here now and with tomatoes being at their cheapest and best at the moment, I had to make the risotto first.  I added some saffron for colour and for that extra Spanish touch and topped it with my favourite tomato friends: basil, pine nuts and parmesan. They were meant for each other.

The first part of this recipe is making a tomato fondue (or sauce) to add into the risotto when it is cooked. You could skip this part if short on time and replace it with some shop-bought tomato pasta/marinara sauce.

Tomato & Saffron Risotto with Basil Pine Nuts & Parmesan

Serves 4, vegetarian, gluten-free. Adapted from Sand at The Plettenberg recipe

For the tomato fondue (sauce)

  • 2-4 ripe tomatoes, I used 2 huge Spanish ones that hardly have any seeds
  • 1/2 red onion, finely chopped
  • 1 large clove garlic, finely chopped
  • 1/2 tsp dried oregano
  • 1 tbsp tomato ketchup
  • 1/2 tsp brown sugar
  • salt & pepper

Drop the tomatoes in boiling water for about 20 seconds, drain and remove the skins, seeds and chop the tomato flesh. Cook the onion in olive oil for a few minutes with a pinch of salt then add the garlic & oregano and cook for another minute. add the tomatoes and cook until softened. Add the ketchup, sugar and season with salt & black pepper. Cook until reduced and thickened. Taste and adjust sugar/salt as required. Set aside.

For the Risotto:

  • 350 g risotto rice
  • 1 litre vegetable stock (I made my own recipe here using lots of tomato to intensify the tomato flavour)
  • a big pinch of saffron
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 tsp dried oregano
  • a pinch of dried chilli flakes
  • 150 ml sherry or white wine
  • about 120 ml (1/2 cup) tomato fondue/pasta sauce (see recipe above)
  • 200 g cherry/baby tomatoes (on the vine if possible)
  • olive oil
  • salt & black pepper
  • 30 gr grated parmesan or manchego (vegetarian) plus shaved for garnish
  •  a hand ful of basil leaves juliennned, plus leaves to garnish
  •  a squeeze of fresh lemon juice
  • 40 gr toasted pine nuts

Put the veg stock and saffron in pan over a medium low heat to warm up but not boil.

Meanwhile, cook the onion in the olive oil with a pinch of salt over a medium heat for 3 minutes then add the garlic, oregano & chilli flakes and cook for another 2 mins.  Add in the rice stirring to coat in the oil and cook for 2 minutes before adding the sherry/wine and cook until it is dry.

Start by adding 2 ladles of the hot stock to the rice and swirl the pan until all the liquid has been absorbed. Add another ladle of stock, wait for it to be absorbed, swirling  and continue like this until the rice is cooked and you have used all of the stock. If you run out of stock you can add hot water. Then stir in the tomato fondue/sauce.

Stir in the grated parmesan, sliced basil, lemon juice and season with salt & pepper. Remove from the heat and put the lid on.

Preheat a griddle pan (or frying pan if you don’t have one), season the cherry tomatoes in a bowl with salt, pepper and drizzle with olive oil, toss to coat. Cook them on the griddle pan until you get black marks and they start to soften.

Taste the risotto for seasoning and serve topped with a pile of  cherry tomatoes, shaved parmesan, toasted pine nuts and basil leaves.

Avocado Tomato Tian, Tempura Peppers, Sweet Chilli, Basil Coriander Sauce

The last of the hass avocados are being harvested at the moment where we walk the dog. They are stored in piles of crates ready for market. The farmers are cutting back the trees and making bonfires out of the mountains of branches.

This was the first thing we ate when we arrived in Cape Town. Just off the plane and straight to lunch at Harbour House at The Waterfront. The shape of things to come. Lunch and dinner booked every day for three weeks, well nearly. In the end I worked it out as 29 meals out in 19 days. This does not include breakfasts or the meals we had at the Game Reserve. Heaven or hell? You decide…….

Their version was with tempura prawns, I changed it to red peppers because you can cut them in a similar shape to prawns (they have that natural curl) and they look sort of pink in the tempura.

The original recipe uses fresh basil to infuse an olive oil and a mayonnaise as two of the three sauces that are used to dress the plate. I didn’t have any fresh basil so I used some basil pesto and lots of fresh coriander to increase the vibrancy of the green. I blended these together in the oil and mayonnaise with a stick blender.

Basil and coriander actually work really well together. I was a bit worried about the Italian/Indian (con) fusion of flavours. But hey it tastes good.

Avocado Tomato Tian, Tempura Peppers, Sweet Chilli, Basil Coriander Sauce

Serves 2, Vegetarian (Vegan without the mayo). Adapted from the Harbour House recipe

Prep time: 40 mins Cooking Time: 5 mins

  • 1 medium red pepper, cut in 1 cm slices
  • 2 small avocados, mashed with lemon juice
  • 2 small tomatoes, peeled, deseeded & chopped
  • 1 small aubergine, cut into 1 cm rounds
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • a pinch of chilli flakes
  • salt & pepper
  • sweet chilli sauce, see my recipe here if you want to make your own
  • fresh basil leaves (or I used basil pesto and fresh coriander), save some for garnish
  • 1 heaped tbsp mayonnaise
  • 1/2 lemon
  • olive oil
  • 2 or 3 tbsp cornflour (cornstarch, maizena)
  • 100 gr flour (I used spelt flour)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 200 ml iced fizzy water (or beer)
  • vegetable oil for deep/frying

Drizzle the aubergine slices with olive oil and season with salt, pepper, minced garlic and chilli flakes. Roast in a 200 c oven for about 30 minutes until softened. You won’t need the whole aubergine for this dish but you can keep the rest for salads, wraps or whatever.

Put the pepper strips on a plate and sieve over the cornflour until the peppers are coated on all sides.

Mash the avocados with a big squeeze of lemon and season with salt & black pepper, taste.

Cut a cross in the base of each tomato. Plunge them into a bowl of boiling water and leave for about 30 seconds. Drain then refresh them in a bowl of iced water for another 30 seconds. Then you can peel them easily.

Half or quarter the tomatoes and remove all of the seeds. Chop or dice the tomato flesh, season with salt & pepper and set aside.

Add one heaped tablespoon of mayonnaise into to a measuring jug with one teaspoon of basil pesto and/or a big handful of basil/coriander leaves for a greener colour. Add a squeeze of lemon, a drizzle of olive oil, salt & pepper. Blend with a stick blender adding a splash of water to loosen it if necessary. Taste.

Ina separate measuring jug add another teaspoon of pesto and/or a big handful of basil or coriander leaves. Drizzle over a good glug of olive oil and blend. Add more oil until you get a good drizzling consistency. Season.

Sieve the flour, baking powder & salt into a large bowl. Whisk in the ice-cold water/beer until just combined. Do not over whisk.

Heat the oil to about 180 c in a wok. Add the peppers (in two or 3 batches) to the batter and coat completely. When the oil is hot, carefully lower the first batch of peppers into the wok. When the peppers have come to the surface, if you like you can sprinkle over some more batter from a height with your fingers. This gives it an extra, light crispy coating. Use chopsticks or a metal slotted spoon to move the peppers onto the bits of batter so it sticks  to the peppers. Cook for 2-3 minutes on each side.

Drain in a sieve over kitchen paper and keep warm while you cook the rest.

Using a mould or chef’s ring on your serving plate, place two slices of aubergine into the base. Top with with a layer of the diced tomatoes then add a layer of the mashed avocado. Smooth the top and press down lightly.

Drizzle the mayonnaise, sweet chilli sauce and basil oil around the plate. Place the tempura peppers evenly around the tower/tian. Then slowly lift of the ring and serve garnished with some fresh basil or coriander leaves and a drizzle of the basil oil. Some toasted ciabatta slices would be good with this too.

Now try to get someone else to clean up the mess in the kitchen!!

Indian Spinach Koftas with Creamy Tomato and Cashew Nut Sauce

Any excuse to get more spinach in my diet and I’m there. It’s not all about the iron you know, here are just some of the health benefits of eating this wonderful green leaf. Popeye wasn’t as stupid as he looked….

One cup of spinach has nearly 20% of the RDA of dietary fibre which aids in digestion, maintains low blood sugar, and curbs overeating.

Flavonoids — a phytonutrient with anti-cancer properties abundant in spinach have been shown to slow down the growth of stomach and skin cancer cells. Furthermore, spinach has shown significant protection against the occurrence of aggressive prostate cancer.

The vitamin C, vitamin E, vitamin K, beta-carotene, manganese, zinc and selenium present in spinach all serve as powerful antioxidants that combat the onset of osteoporosis and high blood pressure.

Both antioxidants lutein and zeaxanthin are especially plentiful in spinach and protect the eye from cataracts and age-related eyesight degeneration.

One cup of spinach contains over 337% of the RDA of vitamin A that not only protects and strengthens “entry points” into the human body, such as mucous membranes, respiratory, urinary and intestinal tracts, but is also a key component of white blood cells that fight infection.

The high amount of vitamin A in spinach also promotes healthy skin by allowing for proper moisture retention in the epidermis, thus fighting psoriasis, acne and even wrinkles.

Some friends of ours, Nik & Stacey bought us a new cook book called I Love Curry by Anjum Anand on their last trip back to the UK.  On the first flick through this was the recipe that stood out for me, the one that I wanted to make straight away.

The blended cashew nuts in the sauce give it a creamy texture and flavour that is perfect with the light and fluffy spinach koftas. The koftas are made in a similar way to spinach and ricotta gnocchi and then fried. I used goat’s ricotta which gives a very mild goat’s cheese flavour and is so much better for you than cow’s milk. I served it with a spiced turmeric pilaf rice.

Indian Spinach Koftas with Creamy Tomato & Cashew Nut Sauce

Serves 3-4, vegetarian, gluten-free. Adapted from I Love Curry by Anjun Ananad

For the sauce:

  • 2 large tomatoes, quartered & deseeded
  • 3 cloves garlic, chopped
  • 2 tsp minced ginger
  • 1 or 2 tbsp coconut oil (or other vegetable oil)
  • 1 onion, sliced
  • 50 gr cashew nuts
  • 1/2 tsp turmeric
  • 1/2 tsp chilli powder
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 500 ml veg stock (or water)
  • 2 tbsp tomato puree
  • 1 tsp palm sugar (or brown sugar)
  • a dash of Worcestershire sauce (vegetarian)
  • a squeeze of lemon juice
  • a handful of fresh coriander leaves, to serve

For the koftas:

  • 200 gr fresh spinach, washed
  • 2 tbsp cornflour (cornstarch)
  • 200 gr ricotta cheese (I used goat’s ricotta)
  • vegetable oil for deep-frying

For the Turmeric Pilaf:

  • 220 gr basmati rice, well washed
  • 2 tbsp coconut oil (or butter or ghee)
  • 1 tsp cumin seeds
  • 1 cinnamon stick
  • 1 bay leaf
  • 4 cardamom pods
  • 4 cloves
  • 1 small onion, sliced
  • 1/2 tsp turmeric
  • 1 tsp salt
  • 1/2 tsp black pepper

Blend the tomatoes, garlic and ginger to a paste with a little water to get it going. Heat the oil in a large pan over a medium heat and cook the onion for about 5 minutes until lightly browned.

Add in the blended tomatoes, cashew nuts, spices, salt & pepper. Cook over a medium heat for 15 minutes, stirring occasionally. Blend until smooth with a little water if necessary then pour it back into the pan, add the stock (or water), tomato puree, sugar and Worcestershire sauce. Bring to the boil, then reduce the heat and simmer for 8-10 minutes until it is the consistency of single cream.

Meanwhile make the dumplings. Wilt the spinach in a pan with a tbsp water, a pinch salt and 1/4 tsp freshly grated nutmeg. When cool enough to handle squeeze out the excess water (in a clean tea towel) and blend to a puree with a stick blender. Then add the cornflour and ricotta and mix together well. Taste and season with salt & black pepper as required.

Heat about 5cm vegetable oil in a deep frying pan or wok over a medium high heat. To test if the oil is hot enough drop a tiny amount of the spinach mix into the oil, it should sizzle immediately but not brown straight away.

Drop heaped teaspoons full of the spinach mix into the oil. You will need to do it in batches. I got 16 out of this mixture.

Cook the koftas, turning occasionally with a metal spoon, so they cook evenly. They should take 2-3 minutes per side until browned. Remove with a slotted spoon and drain on kitchen paper.

To serve, add a squeeze of lemon to the sauce. You can add the koftas into the sauce to reheat them or serve them straight way with the hot sauce poured over and some fresh coriander leaves to garnish.

For the Rice Pilaf:

Tip the rice into a large bowl, cover with water and leave to soak. Heat the coconut oil/ghee in a saucepan over a medium heat then add the cumin seeds, cinnamon stick, bay leaf, cardamom pods and cloves and leave to sizzle and pop for about 20 seconds. Add the onion and cook for about 4 minutes until turning golden.

Drain the rice and add it to the pan with the turmeric, salt & black pepper and cook, stirring for a minute. Add 400 ml water, taste the water and add more salt if necessary.

Bring to a boil then reduce the heat to its lowest setting, cover and leave to cook for 12-13 minutes without stirring. Check the rice it should be cooked. Remove from the heat and serve when ready.

Things That Made Me Smile Today…………..

Today we visited the Alcazaba (Moorish fortress) in Malaga. It’s the first time we’ve been and I was really surprised at how beautiful it is. Everyone goes to the Alhambra but I doubt many people even know there is a smaller much less touristy version in Malaga. It’s practically deserted. Apart from the robins that is….

Mexican Tortilla Lasagne with Roasted Salsa Verde

This is the best vegetarian lasagne you’ll ever make. High praise I know, there’s nothing like setting yourself up for a fall but I really believe it. Lasagnes are one of those meals that have been done to death, diluted and destroyed by frozen food manufacturers.

When we first opened the restaurant, one of the things that I promised myself is that we would never serve a vegetable lasagne as the vegetarian option. It is the fallback/default veggie option in many restaurants and I think it’s just lazy. Most of them are a frozen, watery, disgusting, flavourless disgrace. Enough ranting…. I also said we would never serve chips or Traditional Sunday Lunch, ha! That didn’t last very long, Sunday lunch was the best thing we ever did and chips are what the people want. It was a steep learning curve.

Tricolor Baked Avocado with Pesto Garlic Bread

The smooth skinned, green avocados are in season here at the moment. Where we walk the dog there are thousands of avocado trees and sometimes, if it has been windy, there will be a windfall or two. Gifts from heaven if you like.

For a change I wanted to make a dish where the avocado was the star rather than just being an ingredient in a salad or made into a guacamole. You can cook avocado, it intensifies the flavour and makes it even more creamy in my opinion. 

 This is a dish that The Washer Up and I came up with when we first moved to Spain and lived with my dad. It’s a hot Tricolor salad really. The avocado is surrounded by a pool of your favourite tomato pasta sauce, topped with sliced or ripped mozzarella and strewn with fresh basil leaves.  Continue reading

Pisto Con Huevos – A Rustic Spanish Classic

Pisto con huevos is a Spanish version of ratatouille (pisto) topped with an egg then baked in the oven, in my version anyway. Alternatively you can top it with a fried egg or mix the eggs into the pisto like scrambled.

This popular rustic dish is often referred to as Pisto Manchego because it was first developed in central La Mancha. Manchego means “from La Mancha”. You may not know that the true Manchego cheese is made only from whole milk of the Manchega sheep raised in the “La Mancha” region.  Hard cured sheep’s milk cheeses from other regions are called Queso de Oveja Curado. Roasted Tomato, Saffron and Mozzarella Risotto Layer Cake

I roasted off another batch of my favourite slow roasted tomatoes yesterday and wanted to use them in something lovely for dinner. I found a recipe for a grilled vegetable saffron risotto cake that fit the bill perfectly.

In the original version they layer it with grilled aubergine, courgette and roasted peppers which I will definitely try next time. But I had all these sweet roasted tomatoes hanging about and I was hungry, so I just used them. I also added some of my sundried tomatoes for extra tomato intensity.

Roasted Tomato, Saffron & Mozzarella Risotto Layer Cake

Serves 4-6, vegetarian, gluten-free. Adapted from  Jane Baxter, The Guardian

  • 1 red onion, finely chopped
  • 1 big pinch saffron
  • 2 tbsp olive oil
  • 1/2 tsp crushed fennel seeds
  • 2 cloves garlic, finely chopped
  • 1 big pinch of dried chilli flakes
  • 20 slow roasted tomato halves, see recipe here
  • 2 or 3 tbsp finely chopped sundried tomatoes plus 8 strips for layers
  • 300 gr risotto rice (I used brown rice, it takes longer to cook and more stock)
  • salt & black pepper
  • a splash of white wine/vermouth
  • 1 – 1 1/2 litres veg stock
  • a bunch fresh basil leaves, 1/2 finely shredded 1/2 left whole
  • 125 gr ball mozzarella, sliced in 5mm thick ovals
  • a handful of finely grated Manchego/Parmesan
  • rocket, olive oil & balsamic vinegar to serve

Put the veg stock in small pan, over a medium-low heat to heat up while you are cooking.

Heat the oil in a large pan over a medium heat and cook the onion and saffron with a pinch of salt for 5 -6 minutes until softened. Then add the fennel seeds, garlic and chilli flakes and cook for a further 2 minutes. Now add 12 of the roasted tomato halves and any roasting juices, the chopped sun-dried tomatoes and the rice. Cook at a fast simmer, stirring for about 2 minutes, season generously with salt & pepper & splash in the wine.

Add the hot stock to the rice a ladleful at a time over a medium heat, adding the next ladleful when the previous one has all been absorbed. Continue like this until most of the stock is used up (1 litre for risotto rice – 1 1/2 for brown rice), taste the rice and see if it is cooked. It should still have a bit of bite to it. Season again, add in the finely shredded basil, stir and taste. Remove from the heat and leave to cool. I didn’t leave it to cool very long, I was hungry.

Preheat the oven to 180 C. Line the base of a terrine or loaf tin with baking parchment and oil/butter the sides. Take 1/3 of the cooled rice and press it into the bottom of the mould evenly. Top with 4 of the remaining roasted tomatoes in a line along the centre of the rice then top those with a half of the mozzarella slices, the a line of sun-dried tomato strips, then with a line of basil leaves. Sprinkle over half the grated cheese.

Top with another 1/3 rice, press down evenly and add toppings as before. Then finish off with the final layer of rice and press down evenly. Cook in the preheated oven for 30 minutes until golden brown on top.

To serve, run a knife around the edge of the cake and turn it out onto a serving plate. Use a serrated bread knife to cut into generous slices and serve with a rocket salad dressed with olive oil, balsamic vinegar, salt and black pepper.

This is equally good served hot or cold and would be perfect for a summer picnic or buffet table.
