About Cook Eat Live Vegetarian

 

My name is Natalie Ward. I live in Andalucia, Spain with my partner Allen (The Washer Up), our dog Rufus and our three cats Anouschka, Biba & Tallullah.

I am a freelance food writer, photographer and stylist specialising in delicious vegetarian and vegan cuisine.

We used to own and run a restaurant called Santiago del Calvario which we sold in 2009 to our good friends Tim and Tony when I was diagnosed with breast cancer. I am now fully recovered and feeling better than ever. I attribute my swift recovery to a combination of conventional and alternative treatments and my following a whole foods, mainly plant based diet. I avoided all cows milk products, sugar (including all fruit), processed and refined foods.

My diet post treatment is less strict but I still choose to keep my consumption of cows mik products very low, avoid processed foods, use whole foods whenever possible and I try to limit my intake of animal based foods to below 10 per cent of my diet.

When we ran the restaurant Allen was in the kitchen and I was front of house. We designed the menus together and have always been slightly obsessed with food. Now that we have sold the restaurant I am in our kitchen cooking every day and he does the washing up!

This blog is to share our enthusiasm for fantastic food with a world flavour. Using seasonal produce, grown locally where possible, we aim to excite with global vegetarian cuisine . Our inspiration comes from what fruit & vegetables we see growing while walking the dog in the “campo” in the morning  and we hope to share some of the beauty of Andalucia in the process.

The recipes that inspire us come from books, television programmes, restaurants, travelling and many other fantastic foodblogs. Although I am vegetarian The Washer Up isn’t so there will occasionally be some recipes that can be adapted to include meat and fish but the majority will be for fabulous meat free dishes from around the world that will have even the most stubborn carnivores drooling and singing your praises.

    How did you end up living in Spain? How long have you lived there? I would love to see more posts about your life there in addition to the food you cook. I looked through your tags but didn’t see anything about “life in andalucia”. Anyways, beautiful blog! Nice to meet you! 🙂

    Ahhh. You’re close to Malaga. So you’re pretty far south! I got down to Cadiz, and over to Valencia, but didn’t make it to Malaga. I found the folks in the south of Spain to be the friendliest. I was traveling alone, and I’ll never forgot, I was on the beach in Cadiz walking on these huge rocks. These two guys about my age were throwing a stick into the sea, their dog would jump in and get it and swim back. I do not remember how in the world he got back up on the rocks?? Anyway, I’d been traveling alone for about 3 weeks and I was so lonely, I went up to them and asked them what their dog’s name was. We carried on a conversation and they asked me if I wanted to join them with their group of friends that evening. They were going to a club/tapas bar, or something. I was so flattered. I hightailed it back to the hostel (on the other side of town) to take a shower and meet them back at the spot. But I was late by about 1/2 an hour because the bus kept stopping to pick people up. When I got there, they were gone. I was so disappointed I cried on the bus all the way back to the hostel. I was about 19…. 🙂
    That’s my most vivid memory of south Spain. The friendly boys and their dog. (I’m actually writing about that year and a half I was away in Europe on my own in a memoir! I’m on chapter 37!!)

    We have the same last name. You keep getting cooler. Maybe we’re kin somewhere down the line. That’s just craziness!

      Oh that’s so sad, but a great story for the book! The only time I went to Cadiz it was really windy, as in horizontal, unable to walk wind. I don’t remember anything else about it and I have photos of me with my hair blowing straight up in the air, it was exhausting.

    Hi Natalie, I actually found from foodbuzz while I was doing a bit of networking. I love a good vegetarian blog that inspires even with the lack of meat.

    Just an aside how do you find life in Andalusia, my padres “live round the corner” in a place called Mojacar. Tis very nice indeed.

    Dear Natalie.

    I am a huge fan of your cooking, and constantly recommend your site to others. Re the Washer upper and wheat, i adapted a Dan Lepard bread recipe and now get beautifully risen spelt bread. Maybe it might be useful?

    200grams white spelt, 200 grams wholegrain spelt flour, 5gram dried yeast, 5gram seasalt, 270gram handhot water with 2 tablespoons honey and 1-2 tablespoons cider vinegar. Mix all together, rest 10 mins, *rub tablespoon oil onto pastry board, knead 1 min* repeat from * to * 2 times. Cover and let rise 40 – 60 mins. Knock back, shape and place in cast iron pan with lid like a crueset pan and leave to second rise half an hour. Put in oven from cold, turn on heat to 200 centigrade. Bake 40 mins. Take lid off, check for browness on top, maybe bake another 10 mins. Turn off oven, take out pan and leave loaf to cool in pan. Perfectly lovely spelt bread in case washer up feels need for sandwich at work.

        Hi Natalie.

        The vinegar is not necessary but it helps soften the gluten and aids the rise (absolutely no aftertaste).  Attached is a pic of a loaf made yesterday.  The cast iron pot is useful because it holds in moisture and retains heat.  I think the starting from cold aids the development of the yeast rise (and cuts out the having to heat the oven up beforehand.  I would suspect a chicken clay thingy or soapstone would be just as good. 

        Am doing the empanadas this weekend.

    I stumbled across your blog today whilst looking for ideas on how to use very young leeks in cooking, we have a surplus of young ones now that our growing area has been planted out. We are a community farm project in southern england and grow our own vegetables and some fruit. We aim for improved sustainability and encouraging local people to eat seasonal foods locally produced. I am always looking for recipes and ideas to inspire people to utilise what we are growing and there are many of your recipes that strike a chord; I am sure that there are many that would be encouraged by them. I’ve been a vegetarian for 30 years, some as vegan, some as pescatarian, etc. I am already a devoted fan of yours by simply reading all the wonderful recipes and ingredients you cook with! My only request is that being an American, could you please please please translate the weights and measures for me in your quantities? xx
